Greek Salad

I looked in my fridge and found that I have veggies on the verge of going bad. So, I am making this salad, but adding  the half empty box of pasta that I have left over too. I have an eggplant going soft as well, so making it into a dip by roasting it and scooping it into the food processor with greek yogurt, garlic and lemon juice to dip pita bread into.

Chopped Greek Salad
For the Salad:
■2 large English Cucumber, sliced
■1 pint Grape tomatoes
■1 Red Bell Pepper, chopped
■1 Green Bell Pepper, chopped
■1/2 red Onion, sliced thin
■1 cup Kalamata Olives
■2 Tbs chopped fresh parsley
For the Dressing:
■1/2 cup extra virgin olive oil
■Juice of 2 fresh squeezed lemons
■2 cloves garlic, minced
■2 tsp dried Oregano
■1 tsp sea salt
■1 tsp black pepper
{Whisk all the ingredients, pour over chopped salad, combine well}
